Banana Nut Rolls

Before:
Finished product...enjoy!

Banana Nut Rolls
by Brandi

½ C brown sugar packed
½ C melted butter or margarine
½ C chopped pecans
15 x 9 glass cake pan
While oven heats, melt ½ C butter and pour into bottom of pan. Sprinkle pan with ½ C brown sugar, ½ C chopped pecans. You will put the rolls on top of this.

2 cups Bisquick or Jiffy Mix
2/3 C mashed ripe banana, about 2
2 T melted butter or margarine
2T brown sugar, packed
1/2 C chopped pecans
Mix 2 cups Bisquick Mix with mashed ripe bananas until it makes a soft dough. Add more Bisquick if needed to make the dough so you can handle it without it being too gooey. Sprinkle 2 T. Bisquick on a clean surface and rub around to dust an area about a 12 x 18 area. Put dough in center and dust a rolling pin with dry B isquick as well. Roll out dough to approx 9 x 12 piece. Take a T. of melted butter and brush over dough. Sprinkle brown sugar over dough evenly. Sprinkle ½ C of pecans over that. Roll dough into a jelly roll from the short side so you end of with a roll about 12 inches long. Cut 1 inch pieces and place in pan about 3 across. This shouldn’t leave too much room in between them. The recipe will make about 4 rows of 3 across in the baking pan with some room for them to expand.
Bake in oven set at 450 degrees for approx. 15-20 minutes depending on your oven. The tops will start to brown and you will see the butter and brown sugar bubbling. When finished, take out of oven and put a cookie sheet WITH SIDES on it over the pan of rolls and CAREFULLY flip the sheet and pan over so that it comes out inverted. The caramel part will be VERY HOT and will run on to the cookie sheet which is why it needs sides on it.

Temple Blessings Week

Baked Chicken Lasagna Rolls

BAKED CHICKEN LASAGNA ROLLS

Ingredients

2 cups part skim ricotta cheese

1¼ cup Mozzarella cheese, shredded

¼ cup Parmesan cheese, shredded

1 egg

1 clove fresh garlic, grated

¼ cup chopped fresh parsley

½ teaspoon salt

½ teaspoon black pepper

2 cups shredded baked chicken breasts*

8 cooked lasagna noodles

1 ½ cup tomato sauce

Fresh basil, thinly sliced

* As a time-saver, you can use a rotisserie chicken from your grocer’s deli.

Directions
1. Preheat oven to 375°.
2. Mix first eight ingredients, reserving ¼ cup of mozzarella to add to top. Set aside.
3. Lay a large piece of plastic wrap on countertop. Lay noodles flat atop plastic wrap, top each noodle with a layer of ricotta mixture and ¼ cup chicken.
4. Starting at one end, roll one noodle at a time.
5. Fill the bottom of a baking dish with ½ cup of tomato sauce.
6. Lay rolls seam-side down, cover with remaining tomato sauce, and sprinkle with ¼ cup mozzarella cheese.
7. Bake at 375° for 20 minutes.
8. Top with fresh basil just before serving.

I like to serve this dish with homemade bruschetta and a Caesar salad.

Calling recipes



This is going to be a new thing. I know a lot of you love to cook and try new foods so we've decided to post a new recipe every week or so. If you have any recipes that you would love to share please email them at righteoussisterhood@gmail.com . The first comes from our lovely friend Suzanne.

NORDSTROM’S TOMATO SOUP*
*with adaptations by Suzanne Johnson

2 Tbsp. olive oil
2 celery stalks, chopped
1 carrot, chopped
1 can (28 ounces) whole, peeled tomatoes
1 can (28 ounces) crushed tomatoes
3 Tbsp. tomato paste
2 cups vegetable or chicken broth
1 bay leaf
1 to 2 cups cream, room temperature
Kosher salt and freshly ground black pepper, to taste

Fresh Basil, thinly chopped

*I added 1 cup of Libby’s brand pumpkin for added texture and fiber

In a large pot, heat olive oil over medium heat. Add onion, celery and carrot and cook until tender, about 10 minutes. Add whole tomatoes, crushed tomatoes, tomato paste, broth and bay leaf. Bring to a boil, then reduce to a simmer and cook until carrots are very tender, about 30 minutes. Add cream, as desired. With an immersion blender (or you can use a regular blender), puree soup until smooth. Season to taste with salt and pepper.
*Mini grill cheese sandwich croutons are a fun accompaniment to this dish as well! Just prepare grill cheese sandwiches your favorite way then cut into 1-inch squares. Serve soup hot, topped with a few sandwich croutons per serving. Deliciously divine!

New Arrival


We would like to congratulate Megan and Spencer Beals on their new arrival. They had a baby boy October 15th at 11:53am. Sawyer Beals weighed in at 6lbs. 12oz and was 20 1/2 inches long. Both Megan and Sawyer are doing well.

Ward Cannery Day tomorrow


Our ward has some slots reserved at the Cannery for tomorrow October 16th from 11-1.
Then we have another session, this time in the evening, on November 11th from 4 to 6pm.
If you would like to go to the cannery on either of these dates you have two options:
1) Go to the Cannery (4455 Allen Ln, North Las Vegas, Nevada 89031) and get the items yourself

2) Send a list of bulk items to Sister Pingel of what you would like and we can pick them up and get them to you. (You will need to borrow the ward's sealer and pouch up these items yourself.)

Seeley Farewell

As all of you know by now, Bishop and Sister Seeley are moving and will be leaving us very shortly. There will be a farewell in their honor on Wednesday October 8th from 6:30-8:30pm. If you signed up to bring a treat don't forget!

Ward Trunk or Treat

Baby Tilley


Becky Tilley had a baby girl! Kira Tilley weighed in at 7lbs 8oz and was 20 inches long. Mom and baby are doing well and anticipate coming home from the hospital tonight or first thing in the morning. We'd like to put togethera basket of baby goodies for the Tilleys. If you have something you would like to add please bring it Sunday. Feel free to drop it off in the basket in the relief society room or make arrangements with Shawna Pay or Nicole Halvorsen.
